It's a type of sparkling wine known as pétillant naturel (or just pétillant or pét-nat, for short), a style made in a manner that predates the so-called Champagne method. Rather than induce a second fermentation in-bottle to create bubbles, Laurent simply bottled the wine before initial fermentation had ended.
The result is a gentle fizz that carries the delicate fruit flavors from his blend of southern French grapes just perfectly.
And while delicious on its own, it's also ultra-versatile on the table. Enjoy with a variety of foods, including most cheeses, seafood or spicy Asian noodles.
