Hervé Fabre has made quite the name for himself. His world-class estate in Argentina is a favorite of top critics and he’s even won the International Wine Challenge Red Winemaker of the Year. He’s best known for crafting a “pure expression of Malbec,” as Decanter puts it. But Hervé returned to his roots to craft Assemblage.
Hervé was born and raised in Bordeaux. For centuries, its winemakers achieved stunning flavors and balance through assemblage, the art of blending multiple grape varieties. But when Hervé left the France to pioneer Argentine wine, he left the “Old World” rules for those of the “New World.”
Like most New World regions, Argentina announced itself to the world wine stage with a “varietal” (aka wines made with just one grape variety). Hervé followed suit, with marvelous results. But now, he’s breaking the rules…and getting back to blending. He took his silky-smooth Malbec and added two of Bordeaux’s classic varieties—rich, bold Cabernet Sauvignon and red-fruited, peppery Cabernet Franc.
The result is a wine that’s rich in flavor with perfect balance. The finish is long and refreshing, which makes it very food-friendly—especially with bold, char-grilled steak (an Argentine favorite) and roasted veggies.
