The no-alcohol gem is crafted by Joan Soler, one of Spain’s top winemakers. His trick is starting with regular alcoholic wine (of 100% Macabeo, a local grape that captures the expression of the Catalonia region in which it’s made), then extracting the alcohol while preserving the wine’s fresh, natural flavors.
The result is light, floral and oh-so refreshing, with bright apple and citrus notes, plus a hint of tropical fruit, and those all-important fine bubbles.
